Farmers Market Finds

Today is my last official weekday off before school starts. (Although we have next Friday & the following Monday off for Labor Day, so I can’t complain!)

So on my last carefree day, I decided to do a little back-to-school clothing shopping, then hit up a local farmers market. I had been to the Shillington Farmers Market once before, but on that visit I was there strictly for cupcakes. Today, I wanted to stock up on fresh fruit!

I was able to purchase 6 oranges, 4 Fuji apples, strawberries, 2 lemons (to use in a dinner recipe next week) & 1 avocado for $15.00!

I was a little shocked to arrive home from my errands & find this:

That would be a rather well-stocked fruit drawer! Chris usually eats a ton of fruit during the week, so I was surprised to see that we were actually good to go for a while yet.

What to do, what to do? I had recently won a giveaway on Chelsey’s blog for Clearly Fresh produce storage bags. According to the website…

I packed up 2 Clearly Fresh bags with my extra apples & oranges, & I guess we’ll see what happens! 😉

Backtracking to last night, Chris & I enjoyed another crock pot chicken meal that I’d like to share.

I modeled this dinner off of Campbell’s Slow Cooker Chicken in Creamy Sun-Dried Tomato Sauce, but made quite a few changes (sun-dried tomatoes are kind of expensive, in case you didn’t know!).

Slow Cooker Tomato Artichoke Chicken

Serves 2

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 can Campbell’s condensed cream of chicken soup
  • About 1 cup white wine (I just “eyeballed” the amount I added)
  • Sprinkle of garlic powder
  • 1 jar artichoke hearts (drained & chopped)
  • 1 can diced tomatoes
  • Brown rice
  • Basil

Directions:

  • Combine the soup, wine, garlic powder, artichoke hearts, & tomatoes in a slow cooker.
  • Add the chicken, & turn to coat the chicken with the soup mixture.

  • Cook on low for 7-8 hours (I did 8, but 7 would be plenty).
  • Serve chicken on a bed of brown rice, & top with extra soup mixture & basil.

This was a delicious & very filling meal. I actually couldn’t finish my portion, even though I really wanted to! (Stew wanted in as well!)

And I can’t forget to make mention of dessert – a peanut butter cup Blizzard from Dairy Queen!!! Heavenly.

I ended up sleeping in until about 8:00 this morning, which is actually sort of late for me, even though it’s summer vacation! I guess walking around New York City in 100* heat yesterday really took it out of me. When I woke up, I headed to the gym & completed an elliptical workout, varying the incline & resistance. I also did a quick arm workout when I got home in a last-ditch effort to tone up my arms a bit more for the wedding!

Since I’ll probably be eating leftovers from yesterday, I figured I’d share a few of my favorite things with you all since I’m relatively new to blogging & this might help you get to know me a bit better. I’ll list a few today, & perhaps do a few additional posts with more of my random favorites, & trust me, they are random!

Iced Coffee!

For some reason this is all I have been craving after my AM workouts; especially from Dunkin Donuts! As I said in this post, I pass a Dunkin Donuts on my way home from the gym, which doesn’t help my situation! I try to limit my iced coffee purchases to 3 a week so that I don’t end up spending $2.43 every day on my habit! $7 a week doesn’t seem too outrageous, does it?!

My Gucci handbag!

I’m a purse girl all the way; I’ll always take a new purse over shoes! This bag is extra special though, because I purchased it at the Gucci store on Rodeo Drive in Los Angeles. Chris & I went on a trip there in December of 2008, & he encouraged me to purchase the bag because he knew I would love it even more having bought it at that store! And he was right! It was a big “investment,” (calling it that makes me feel better) but I get a lot of use out of it & I’m always reminded of our fun trip together! 🙂

The Phillies!

Even though I enjoy working out, I have never been an “athlete” & stink at pretty much every sport I attempt! I was never really a big fan of watching sports either. Over the past few years, however, Chris has cultivated a love for the Philadelphia Phillies within me! If you remember, I even showed you all my prized Ryan Howard bobble head in this post! I knew it was “true love” when I started watching the games without Chris! I’m truly a baseball convert!

Chris & I will be attending a wedding this evening; Chris is in the wedding party actually! So I’ll be re-capping that in a post tomorrow. (We have a wedding to attend next weekend too, then it’s our turn!)

Too Hot to Shop

Happy Monday! First up, here’s a round-up of this weekend’s posts, in case you missed anything…

It’s a hot one in the Northeast today & it’s only going to get worse as the week goes on. I’m hoping it’s not in the 100* range for my wedding, but I have a feeling that August might not have been the safest bet for that! 😉

I hit the gym first thing this morning for what I thought was a pretty difficult elliptical workout. This is what it looked like:

This was definitely challenging & sweat-inducing! Anything over 13 resistance feels like you’re walking in quicksand. Afterwards, I finished up with a quick 10 minutes of incline walking.

I was on a mission to find a cute, white dress for my rehearsal/rehearsal dinner this afternoon. I hit up the Philadelphia Premium Outlets & got to work! I ended up finding a dress at the Ann Taylor outlet that was originally $198 & I walked out of there only paying around $60 for it… score! It was on clearance, but luckily they had my size. What do you think?

It was too hot to shop for much longer, so I headed home & dug right into my Chipotle leftovers from yesterday.

I took the “insides” out of the burrito, & added some pepper Jack cheese from last week’s quesadillas.

Cheesy! I popped it into the microwave for a few minutes, mixed everything together, then topped my bowl with some plain Chobani & salsa, along with crumbled up tortilla chips.

Because of my little unplanned nap, my to do list still has some items that need to be checked off for today. Better get moving!
